Pani Puri


Panipuri is a ball-shaped, hollow puri, filled with a mixture of flavored water - spicy and sweet, tamarind chutney, chilli, chaat masala, potato, onion and brown chickpeas...


I would've loved to make my own Puri's but they're easily available, so I bought ready made Puri's and the rest of the stuff is homemade and included in this recipe.

Servings: 3-4

INGREDIENTS:

FOR SPICY WATER:


Mint / Pudina - 1/2 cup
Coriander Leaves - 1 cup
Ginger - 1 inch piece
Chillies - 3, green
Chaat Masala - 2 tbsp
Cumin Powder - 1 tbsp
Pepper Powder - 1 tsp
Hing / Asafoetida - a pinch
Salt - As per taste
Water - 3 cups
Lemon Juice - 2 tbsp

FOR THE SWEET & SPICY WATER:

Fresh Tamarind / Tamarind Extract - 3/4 cup
Sugar - 2 tbsp
Chaat Masala - 2 tbsp
Cumin Powder - 1 tbsp
Pepper Powder - 1 tsp
Chilli Powder - 1/4 tsp
Hing / Asafoetida - a pinch
Salt - As per taste
Water - 2 cups

FOR THE POTATO + CHICKPEAS MIXTURE:

Potatoes - 3, medium, boiled and broken into small pieces
Brown Chickpeas - 300 gms, boiled and ready
Salt - As per taste
Red Onion - 1, very finely chopped
Fresh Coriander - Half cup
Cumin Powder - 1 tbsp
Chaat Masala - 1 tbsp
Chilli Powder - 1 tsp
Black Pepper Powder - 1 tsp
Salt - 1 tsp / As per taste

METHOD:

FOR SPICY WATER:

1) Take all the ingredients and put them into a blender, adding water as required. Mix well.

FOR THE SWEET & SPICY WATER:

1) Take all the ingredients and put them into a blender, adding water as required. Mix well.

EATING / SERVING THE PANI PURI:

1) Make a small hole in the centre of the puri.

2) Stuff it with the Potato + chickpeas mixture. You can warm it up a bit if you like.

3) Fill in with the spicy or sweet water, or a mixture of both.

4) Enjoy!
